Strawberry Parfaits
with Lemon Blueberry Compote

(Makes 4 Servings)

INGREDIENTS:
2 cups low-fat yogurt
2 cups sliced strawberries
1 cup low-sugar granola (or plain rolled oats)
1 cup blueberry compote

DIRECTIONS:
Spoon a small layer of strawberries into a glass (about a ¼ cup).
Cover strawberries with 2 tablespoons granola or oats.
Spoon thin layer of dairy free yogurt.
Top with 1-2 tablespoons of blueberry compote.
Add a second layer of each ingredient. 
Garnish with sliced strawberries.

Blueberry Compote

INGREDIENTS:
2 cups fresh or frozen blueberries
1 tablespoon honey
½ lemon

DIRECTIONS:
In a small saucepan over medium heat the blueberries and honey and cook until blueberries begin to break down and the mixture is slightly thickened, about 5-7 minutes.
Remove pot from heat. Add 1 squeeze lemon juice and mix.
Set aside to cool completely.
